Event: US Open 2000 Client: CEO America Location: Private Residence, 13th Fairway, Pebble Beach Golf Course Guest Count: 1200 Clients Request: Prepare and serve 3 meals per day for 300 people for a total of 4 days. Including full service bar and drink stations; with the highest of quality of food and service to be maintained throughout the event. Included would also be several hor d’oeurves / cocktail parties. Dilemma: The site was 200 miles from our kitchen. We had no established relationships with purveyors in the area. Our staff was split between two locations. The PC Solution:To solve the kitchen and purveyor problem, we simply used 2 kitchens. Our base kitchen in Santa Rosa, were we received our orders and prepped the raw product and our on-site kitchen in Pebble Beach, complete with refrigerators stoves, ranges, and grills. From here we cooked, finished, and served the meals. Each night we loaded our vans with ingredients and delivered it to Pebble Beach. In this way we were able to use the quality products we know and still produce the freshest and highest quality available. The dining room was created using a heated and air conditioned 100’ X 100’ high peaked tent with windows and floor. The service staff dressed in black and whites with a tie for dinner service and casual khaki for breakfast and lunch. The buffets were decorated with a golf course theme complete with grass, sand traps, and hazards. In addition to the cocktail parties, wonderful meals and attentive service, the guests also enjoyed a full service hosted bar, serving bloody marys and mimosas in the morning and remained open throughout the evening. |
