Your tasting is one element of our business we truly look forward to. Meeting each of our clients in person, discussing their dreams and thoughts and helping to make them a reality is a very exciting and rewarding experience.

The tastings take place in our working kitchen located at 1800 Empire Industrial Court, Suite C, Santa Rosa, California. As our guests, you will be greeted by Managing Partner Rob Gronbach and Partner/Chef de Cuisine Donna Wegener. You will spend approximately one and a half hours enjoying some of the menu choices you have made along with discussing the details of your event.

The table is set in the middle of our working kitchen in full view of the chef at work preparing your dishes. You will see first hand the care and attention that we lavish on our food preparation. This is a professional kitchen, not a dining room. If we are in full production for events, you may be surrounded by the sights, smells, sounds and tools of the trade. It is a truly sensory experience. Our kitchen is capable of producing everything from an intimate dinner party to large social and corporate events. This is where we begin the preparation of the food for your wedding. We are often asked how we can produce such quantities of high quality food in such a limited space. The answer is we buy fresh ingredients for each event and do only the prep work here; the final preparation and cooking is done at the event site ensuring the absolute freshest and tastiest cuisine possible. This is how we earned and maintain our reputation for consistently producing a high quality cuisine.

Everyone has different priorities of what they want for their wedding: cuisine, location, the look, the sound, the feel, china, linens, staff, etc. As the Chef is preparing your tasting items, Rob will first listen to your priorities, then begin to ask specific questions to help define and understand them. The actual tasting experience begins with several hors d'oeuvre choices, followed by the other courses you have previously selected. During this time Rob will walk you through the menu selection process and then proceed with some of the other equally important aspects of your wedding day such as :

  • Timeline development and confirmation
  • Layout of the event space and Dining Room
  • Guest flow development
  • Tabletop equipment: linens, china, flatware, stemware, etc.
  • Special theme or decor ideas

If time does not allow for us to get in every detail, we are more than happy to set additional meetings.

Tasting Menus:
From our full menus provided to you, please create a complete menu with several selections from each area. If there are two different fish you are trying to choose between, list both and let us know of your dilemma. List 5 or 6 hors d'oeuvres. Tasting menus are needed 10 days prior to the scheduled date. This allows our kitchen to make sure the required ingredients are available.

The Food Presented is Representative of the Items You Have Pre-Selected:
At times, not all items you selected will be presented, but expect the unexpected. The chef will often add a dish to enhance your menu options.

Use the Tasting to Adapt the Cuisine to Your Personal Tastes:
Like the artists they are, our chefs have their own style. If you desire spicer or milder food, smaller or larger portions, etc. this is the time to discuss it.

No Detail is Final:
We understand that change is part of the process, so not until 15 days prior to the event are things final

The Tasting is Limited to a Maximum of 4 Adults;
It is our experience that the more people involved the less gets accomplished.

Come With an Appetite:
Our tastings are prepared and presented as full portions for each guest so you will have a better idea of portion size and the impact of our beautiful presentations.

Schedule As Far in Advance as Possible:
Because the tastings are in our kitchen there are days that we are too busy to schedule for tastings. Due to the kitchen's need to acquire the freshest ingredients, last minute tastings, unfortunately, are not available.

Your Tasting and Consultation Will Take 1 1/2 to 2 Hours
Additional Meetings:
Occasionally additional time is needed to discuss china, linens, lighting, etc. This is not a problem.

40 minutes from Calistoga and Sonoma
75 minutes from the Golden Gate Bridge

Being on time is important to everyone. We often schedule several tastings a day. In order for everyone to get the maximum out of the meeting, we respectfully request that you are mindful of the time slot you have reserved.
